Egg Fried Rice - Din Tai Fung Style

Ingredients
- 3 eggs
- lard
- salt
- MSG
- day old rice
- spring onions
Procedure
- crack the eggs and whisk them
- add the eggs to the rice and mix
- place a wok on high flame and add 1 tbsp lard to it
- after the lard fully melts, add in the egg-rice mixture
- add salt and MSG to taste
- season with finely chopped spring onions and serve
